Roasted Brussels Sprouts

These make a delicious side dish for dinner, great added to a salad to lunch, and we eat the leftovers in omelets at breakfast. Mmm!
Ingredients:
1 1/2 pound Brussels Sprouts
Ingredients:
3 Tbs Extra Virgin Olive Oil
Ingredients:
3/4 Tsp Salt
Ingredients:
1/2 Tsp Pepper Trim brussells sprouts, cutting off ends and removing any icky looking outer leaves. If large, cut in half.
Toss with olive oil, salt and pepper. Place in a single layer on a baking sheet and roast for 35 - 40 minutes until crisp on the outside and tender on the inside. Toss once or twice during the cooking time to make sure the brussels sprouts brown evenly.
