Winter Squash with Creamy Curry

This recipe is a roasted winter squash with a delicious twist, from The New York Times 11/26/08. Could be a side, but sounds like it would be a terrific main course.
Ingredients:
2 small winter squash, like delicata, about 1 lb. total
Ingredients:
1/2 cup unsweetened coconut milk
Ingredients:
4 tsps roasted red curry paste (more to taste)
Ingredients:
3 tbs chopped crystallized ginger (optional) 1. Preheat oven to 400 degrees. Scrub squash and cut in half lengthwise, remove seeds.
2. In a bowl, combine coconut milk with curry paste and ginger.
3. Place squash on a baking sheet, or shallow baking dish, cut sides up. Spoon in coconut mixture into squash cavities,
coating the edges.
4. Bake for 40-50 mintues, until flesh is soft. Serve.
Yield: 4 servings.
